Celebrate National Walnut Day May 17!

Introducing Chef Katie!

According to Walnuts.org, walnuts are the oldest tree food known to man, dating back to 7000 B.C.E.  
In 1949, the Walnut Marketing Board declared a National Walnut Day, but it was not until 1958 that President D. Eisenhower signed an official declaration, making May 17 National Walnut Day.

Walnuts are rich in heart-healthy fats and antioxidants. The daily recommendation is 1–2 ounces, and there are a variety of ways to get that intake. We'd like to share just one of the yummy ways to enjoy walnuts with a recipe from Chef Katie!!  

Please enjoy this simple and delicious recipe, which you can whip up with the kids and serve for breakfast or an after-school snack!

Chocolate Walnut Banana Breakfast Cookies

Ingredients

  • 2 Bananas ripe and mashed
  • 2 1/2 cups Rolled Oats
  • 1 cup Creamy Peanut Butter**
  • 1/3 cup Honey
  • 1/2 cup Walnuts chopped 
  • ½ cup Chocolate Chips - or raisins!
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon Salt

Method of Preparation

  1. Preheat oven to 325 degrees F.
  2. Mix all ingredients together in a bowl until fully combined.
  3. Measure out ¼ cup of the cookie dough for each cookie. Place it on a lined sheet pan and flatten it out slightly, making sure to form it into a circle.
  4. Place sheet pan in oven and bake for 20 minutes.
  5. Let cool for 10 minutes and enjoy or place in an airtight container for up to 1 week.

Walnuts are an excellent source of protein, which can help stabilize blood sugar levels and provide more consistent energy! Easy to chop and mild in flavor, they can easily be incorporated into baked goods, salads, and trail mix—fresh or toasted! Store in the refrigerator or freezer for the best freshness.
